Broiled Fine Herbs Tomato Slices

  • 3 medium-size ripe tomatoes
  • 1/4 cup [60 mL] garlic mayonnaise
  • 1 tablespoon [15 mL] freshly finely chopped parsley
  • 1 teaspoon [5 mL] chopped chives
  • 1/4 teaspoon [1 mL] salt
  • Pinch of black pepper
  • 3 tablespoons [45 mL] grated Parmesan cheese
  • Chopped parsley [optional - to garnish]
  • Slice tomatoes into 3/4-inch [2-cm] thick slices.
  • Arrange slices side-by-side into an oven-safe dish or onto a baking sheet.
  • Into a small bowl, mix together garlic mayonnaise, finely chopped parsley, chopped chives, salt, pepper and 2 tablespoons [30 mL] of the grated Parmesan cheese.
  • Spread mixture all over tomato slices; sprinkle slices with remaining grated Parmesan cheese.
  • Bake into a preheated 400°F [200°C] oven, for 10 minutes.
  • Then broil tomato slices, 6 inches [15 cm] from heat source, until top mixture is golden brown and bubbling.
  • If desired, sprinkle tomato slices with chopped parsley.
  • Serve immediately.
