- 3 medium-size ripe tomatoes
- 1/4 cup [60 mL] garlic mayonnaise
- 1 tablespoon [15 mL] freshly finely chopped parsley
- 1 teaspoon [5 mL] chopped chives
- 1/4 teaspoon [1 mL] salt
- Pinch of black pepper
- 3 tablespoons [45 mL] grated Parmesan cheese
- Chopped parsley [optional - to garnish]

- Slice tomatoes into 3/4-inch [2-cm] thick slices.
- Arrange slices side-by-side into an oven-safe dish or onto a baking sheet.
- Into a small bowl, mix together garlic mayonnaise, finely chopped parsley, chopped chives, salt, pepper and 2 tablespoons [30 mL] of the grated Parmesan cheese.
- Spread mixture all over tomato slices; sprinkle slices with remaining grated Parmesan cheese.
- Bake into a preheated 400°F [200°C] oven, for 10 minutes.
- Then broil tomato slices, 6 inches [15 cm] from heat source, until top mixture is golden brown and bubbling.
- If desired, sprinkle tomato slices with chopped parsley.
- Serve immediately.
