- 5 potatoes
- 1/4 cup [60 mL] warm milk
- 2 tablespoons [30 mL] butter
- 1/4 cup [60 mL] cooked, crumbled bacon
- 2 tablespoons [30 mL] minced chives
- Salt and white pepper, to taste
- 1/2 cup [125 mL] fresh cheese curds
- 5 parsley sprigs

- Wash and brush potatoes.
- With a fork, prick potatoes into many places; half potatoes, lengthwise.
- Either bake potatoes into a regular oven until soft or microwave potatoes for 9 minutes on 'MAXIMUM'.
- Delicately empty potatoes, reserving skins.
- Into a bowl, crush potato meat.
- Mix in milk, butter, bacon and chives.
- Salt and pepper.
- Stuff potato skins with mashed potatoes.
- Sprinkle mashed potatoes with fresh cheese curds.
- Broil until golden brown.
- Decorate each potato with a parsley sprig and serve.
