Bacon and Fresh Cheese Stuffed Potatoes

  • 5 potatoes
  • 1/4 cup [60 mL] warm milk
  • 2 tablespoons [30 mL] butter
  • 1/4 cup [60 mL] cooked, crumbled bacon
  • 2 tablespoons [30 mL] minced chives
  • Salt and white pepper, to taste
  • 1/2 cup [125 mL] fresh cheese curds
  • 5 parsley sprigs
  • Wash and brush potatoes.
  • With a fork, prick potatoes into many places; half potatoes, lengthwise.
  • Either bake potatoes into a regular oven until soft or microwave potatoes for 9 minutes on 'MAXIMUM'.
  • Delicately empty potatoes, reserving skins.
  • Into a bowl, crush potato meat.
  • Mix in milk, butter, bacon and chives.
  • Salt and pepper.
  • Stuff potato skins with mashed potatoes.
  • Sprinkle mashed potatoes with fresh cheese curds.
  • Broil until golden brown.
  • Decorate each potato with a parsley sprig and serve.
