Cheesy Tomatoes

  • 12 medium-size tomatoes
  • 2 cups [500 mL] cottage cheese
  • 1/2 green pepper, seeded and finely chopped
  • 2 green onions, finely minced
  • 1 garlic clove, finely minced
  • 1/4 cup [60 mL] freshly chopped basil
    or
    1 tablespoon [15 mL] dried
  • Salt and pepper, to taste
  • Half tomatoes; delicately spoon out pulp.
  • Turn tomato shells upside-down onto a plate; leave to drain while preparing stuffing.
  • Well mix togther cottage cheese, chopped green pepper, minced green onions, minced garlic and basil.
  • Salt and pepper.
  • Stuff tomato shells with mixture.
