Cheesy Broccoli

  • 1/4 cup [60 mL] butter
  • 2 tablespoons [30 mL] flour
  • 2 cups [500 mL] milk
  • 2 cups [500 mL] grated extra-old Cheddar cheese
  • 1/2 teaspoon [2.5 mL] garlic salt
  • White pepper, to taste
  • 1 broccoli, into flowerets
  • 1/4 cup [60 L] water [to microwave]
  • Into a casserole, melt butter; stir in flour.
  • Cook for 1 minute, stirring.
  • Slowly pour in milk, stirring.
  • Stir in grated cheese and garlic salt.
  • Cook over low heat until smooth; pepper and reserve, warm.
  • Steam broccoli flowerets into a daisy wheel until tender or microwave for 5 to 6 minutes, along with water.
  • Drain broccoli flowerets.
  • Coat broccoli flowerets with reserved warm sauce; serve.
