- 1/4 cup [60 mL] butter
- 2 tablespoons [30 mL] flour
- 2 cups [500 mL] milk
- 2 cups [500 mL] grated extra-old Cheddar cheese
- 1/2 teaspoon [2.5 mL] garlic salt
- White pepper, to taste
- 1 broccoli, into flowerets
- 1/4 cup [60 L] water [to microwave]

- Into a casserole, melt butter; stir in flour.
- Cook for 1 minute, stirring.
- Slowly pour in milk, stirring.
- Stir in grated cheese and garlic salt.
- Cook over low heat until smooth; pepper and reserve, warm.
- Steam broccoli flowerets into a daisy wheel until tender or microwave for 5 to 6 minutes, along with water.
- Drain broccoli flowerets.
- Coat broccoli flowerets with reserved warm sauce; serve.
