- 6 to 8 large sweet potatoes
- 1/4 cup [60 mL] light corn syrup
- 1/4 cup [60 mL] dark corn syrup
- 2 tablespoons [30 mL] maple syrup
- 1/4 cup [60 mL] good quality Bourbon
- Salt and pepper, to taste
- Freshly chopped parsley, to garnish

- Cook sweet potatoes; peel and slice crosswise then lengthwise potatoes, or as desired.
- Leave to cool then arrange into a buttered casserole pan or dish.
- Meanwhile, preheat oven to 180°C [350°F].
- Mix together light and dark corn syrups, maple syrup and Bourbon; salt and pepper.
- Pour all over potato slices.
- Bake into preheated oven for approximately 20 to 30 minutes, until hot and bubbling.
- Serve, garnished with freshly chopped parsley.
