Candied Sweet Potatoes With Maple Syrup and Bourbon

  • 6 to 8 large sweet potatoes
  • 1/4 cup [60 mL] light corn syrup
  • 1/4 cup [60 mL] dark corn syrup
  • 2 tablespoons [30 mL] maple syrup
  • 1/4 cup [60 mL] good quality Bourbon
  • Salt and pepper, to taste
  • Freshly chopped parsley, to garnish
  • Cook sweet potatoes; peel and slice crosswise then lengthwise potatoes, or as desired.
  • Leave to cool then arrange into a buttered casserole pan or dish.
  • Meanwhile, preheat oven to 180°C [350°F].
  • Mix together light and dark corn syrups, maple syrup and Bourbon; salt and pepper.
  • Pour all over potato slices.
  • Bake into preheated oven for approximately 20 to 30 minutes, until hot and bubbling.
  • Serve, garnished with freshly chopped parsley.
