- 1/2 cup [125 mL] long-grain rice
- 1 cup [250 mL] water
- 1/4 cup [60 g] margarine
- 1 teaspoon [5 mL] salt
- 1/4 teaspoon [1 mL] pepper
- 1 [10-ounce / 284-g] pack frozen chopped spinach, thawed
- 1 cup [250 mL] grated cheese
- 1/4 cup [60 mL] milk
- 1 egg, slightly beaten

- Into a casserole, mix together rice, water, margarine, salt and pepper.
- Bring to a boil.
- Cover, lower heat and simmer for approximately 20 minutes, until tender.
- Preheat oven to 350°F [180°C].
- Mix in thawed chopped spinach, grated cheese and milk.
- Delicately mix in beaten egg.
- Pour into an oven-safe buttered casserole.
- Bake into preheated oven, uncovered, for 25 minutes.
