Cheesy Vegetable Pie

Comments: Delicious as a lunch or as a side-dish of a complete meal.
It is possible to use any desired vegetables into the filling.

Dough
  • 1/2 cup [115 g] butter or margarine
  • 1 1/4 cups [310 mL] wheat flour
  • 2 teaspoons [10 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 cup [125 mL] plain yogurt
Filling
  • 2 cups [500 mL] broccoli flowerets [preferably half-boiled]
  • 1/2 cup [125 mL] minced onion
  • 1 cup [250 mL] grated Semi-Old Cheddar [or any other easy to melt cheese]
  • 2 medium tomatoes, cut into pieces
  • 1/3 cup [80 mL] mayonnaise
  • 1 teaspoon [5 mL] basil
  • Preheat oven to 450°F [230°C].
  • Mix together all dough ingredients.
  • Press dough into a buttered 10-inch [25-cm] pie plate, using your fingers.
  • Well mix together all filling ingredients.
  • Fill pie shell with filling.
  • Bake pie into preheated oven, for 10 minutes.
  • Lower oven temperature to 350°F [180°C]; bake for 30 minutes more.
