- 3 unpeeled eggplants, stems removed
- Oil for deep-frying
- Salt and pepper

- Cut eggplants lengthwise into thin sticks.
- Preheat oil into a deep-fryer, until oil sizzles when a drop of water is poured in.
- Meanwhile, arrange some eggplant sticks, side-by-side into deep-fryer basket.
- Lower basket into hot oil.
- Brown eggplant sticks into hot oil, turning sticks once.
- Transfer fried eggplant sticks onto paper toweling, onto a serving plate.
- Repeat with remaining eggplant sticks.
- Pepper lightly, salt and serve.
