Deep-Fried Eggplant Sticks
Comments: Excellent served along with roast chicken or lamb, or broiled fish.

Deep-frying time : 3 to 4 minutes

  • 3 unpeeled eggplants, stems removed
  • Oil for deep-frying
  • Salt and pepper
  • Cut eggplants lengthwise into thin sticks.
  • Preheat oil into a deep-fryer, until oil sizzles when a drop of water is poured in.
  • Meanwhile, arrange some eggplant sticks, side-by-side into deep-fryer basket.
  • Lower basket into hot oil.
  • Brown eggplant sticks into hot oil, turning sticks once.
  • Transfer fried eggplant sticks onto paper toweling, onto a serving plate.
  • Repeat with remaining eggplant sticks.
  • Pepper lightly, salt and serve.
