Baked Plantains
Comments: Serve as a side dish, just as you would potatoes.
Plantains are also called Antilla bananas; they are spotted all over with black spots [if they are sold green, leave them to ripen until blackened].

  • 4 ripe unpeeled plantains
  • Oil
  • Unsalted butter, to taste
  • Preheat oven to 400°F [200°C].
  • Oil plantains.
  • Cut a small slit in the center of each plantain banana.
  • Bake plantains into preheated oven, directly onto oven rack, as you would baked potatoes.
  • When done, just open-up slit and banana meat will puff a little.
  • Serve, along with unsalted butter pieces.
