- 1/4 cup [60 g] butter
- 2 tablespoons [30 mL] finely chopped walnuts
- 1/4 teaspoon [1 mL] basil
- 4 large endives, sliced
- Pepper, to taste
- 1/4 cup [60 mL] consomme

- Melt butter.
- Add chopped walnuts and basil.
- Add endives slices.
- Season with pepper; lightly brown, stirring, for 2 minutes.
- Pour consomme over endives.
- Simmer, covered for 15 minutes, before serving.
