Braised Endives with Walnuts

  • 1/4 cup [60 g] butter
  • 2 tablespoons [30 mL] finely chopped walnuts
  • 1/4 teaspoon [1 mL] basil
  • 4 large endives, sliced
  • Pepper, to taste
  • 1/4 cup [60 mL] consomme
  • Melt butter.
  • Add chopped walnuts and basil.
  • Add endives slices.
  • Season with pepper; lightly brown, stirring, for 2 minutes.
  • Pour consomme over endives.
  • Simmer, covered for 15 minutes, before serving.
