Carrot Ring
Comments: These carrots are excellent served along with any poultry or meat.
This dish can be prepared ahead of time, refrigerated and baked just before serving.

  • 3/4 cup [175 g] shortening
  • 1/2 cup [125 mL] brown sugar
  • 2 eggs, beaten
  • 1 teaspoon [5 mL] lemon juice
  • 1 teaspoon [5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1 tablespoon [15 mL] cold water
  • 1 cup [140 g] flour
  • 1 1/2 cups [375 mL] finely chopped, into a blender or a food processor, carrots
  • Shortening
  • Corn flakes cereals crumbs
  • Preheat oven to 350°F [180°C].
  • Into a bowl, ix together shortening and brown sugar.
  • Well mix in beaten eggs, lemon juice, baking powder, salt, baking soda, cold water, flour and finely chopped carrots.
  • Grease a wreath mold; evenly sprinkle mold with corn flakes cereals crumbs.
  • Evenly pour in chopped carrots mixture.
  • Bake into preheated oven, for approximaty 1 hour 50 minutes.
  • Leave to cool slightly, unmold and serve, sliced into thick slices.
