Baked Beet Slices

  • 6 medium-size beets
  • 1/2 cup [125 mL] boiling water
  • 1/2 teaspoon [2.5 mL] salt
  • 1 teaspoon [5 mL] lemon juice or lime tea
  • 1 tablespoon [15 g] butter
  • Pinch of pepper
  • Preheat oven to 350°F [180°C].
  • Scrub, do not peel beets, reserving tops to be boiled and served as a green vegetable.
  • Slice beets, no more than 1/4-inch [6-mm] thick.
  • Arrange beet slices into an oven-safe dish, with a fit-in lid.
  • Pour in boiling water; sprinkle with salt, then cover dish.
  • Bake into preheated oven, for 1 hour.
  • Just before serving, season beet slices with lemon juice or lime tea, stir in butter and sprinkle with pepper.
