- 6 medium-size beets
- 1/2 cup [125 mL] boiling water
- 1/2 teaspoon [2.5 mL] salt
- 1 teaspoon [5 mL] lemon juice or lime tea
- 1 tablespoon [15 g] butter
- Pinch of pepper

- Preheat oven to 350°F [180°C].
- Scrub, do not peel beets, reserving tops to be boiled and served as a green vegetable.
- Slice beets, no more than 1/4-inch [6-mm] thick.
- Arrange beet slices into an oven-safe dish, with a fit-in lid.
- Pour in boiling water; sprinkle with salt, then cover dish.
- Bake into preheated oven, for 1 hour.
- Just before serving, season beet slices with lemon juice or lime tea, stir in butter and sprinkle with pepper.
