Baked Carrots and Onions
Comments: Chopped parsley mixed into melted butter is nice poured over boiled carrots, as well as boiled potatoes, cauliflower flowerets, or any other light color vegetable.

  • 6 to 8 medium carrots
  • 6 medium onions
  • 1/2 teaspoon [2.5 mL] salt
  • Pepper
  • Melted butter
  • 1 cup [250 mL] medium white sauce
  • 1/3 cup [80 mL] grated cheese
  • Paprika
  • Preheat oven to 325°F [160°C].
  • Peel and slice carrots and onions.
  • Alternately layer carrot and onion slices into a buttered oven-safe dish, sprinkling each layer with salt and pepper.
  • Pour some melted butter all over, then pour in white sauce.
  • Cover dish.
  • Bake into preheated oven, for approximately 40 minutes.
  • Uncover dish; sprinkle all over with grated cheese and paprika.
  • Bake for a little longer, to melt the cheese.
