- 6 tomatoes
- Grated cheese
- Paprika [optional]
Stuffing
- 1 onion, grated
- 1 tablespoon [15 mL] finely chopped sweet green pepper
- 2 tablespoons [30 g] butter
- 2 cups [500 mL] freshly made breadcrumbs
- 1/2 teaspoon [2.5 mL] salt
- 1 egg, well beaten
- 1 teaspoon [5 mL] chopped parsley

- Preheat oven to 350°F [180°C].
- Prepare stuffing.
- Cut a thin slice on top of each tomato.
- Spoon out inside of tomatoes; stuff tomatoes.
- Sprinkle stuffed tomatoes with grated cheese and, if desired, with paprika.
- Arrange stuffed tomatoes into an oven-safe shallow dish.
- Bake into preheated oven until tender, for approximately 30 minutes.
Stuffing
- Brown together grated onion and chopped sweet green pepper into melted butter [watching temperature on top, 270 to 300°F / 130 to 150°C].
- Thoroughly mix in breadcrumbs, salt, beaten egg and chopped parsley.
