Baked Stuffed Tomatoes

  • 6 tomatoes
  • Grated cheese
  • Paprika [optional]
Stuffing
  • 1 onion, grated
  • 1 tablespoon [15 mL] finely chopped sweet green pepper
  • 2 tablespoons [30 g] butter
  • 2 cups [500 mL] freshly made breadcrumbs
  • 1/2 teaspoon [2.5 mL] salt
  • 1 egg, well beaten
  • 1 teaspoon [5 mL] chopped parsley
  • Preheat oven to 350°F [180°C].
  • Prepare stuffing.
  • Cut a thin slice on top of each tomato.
  • Spoon out inside of tomatoes; stuff tomatoes.
  • Sprinkle stuffed tomatoes with grated cheese and, if desired, with paprika.
  • Arrange stuffed tomatoes into an oven-safe shallow dish.
  • Bake into preheated oven until tender, for approximately 30 minutes.
Stuffing
  • Brown together grated onion and chopped sweet green pepper into melted butter [watching temperature on top, 270 to 300°F / 130 to 150°C].
  • Thoroughly mix in breadcrumbs, salt, beaten egg and chopped parsley.
