- 1 1/2 cups [375 mL] black beans
- 4 slices bacon, fried then chopped
- 1 garlic clove, crushed
- 1 onion, chopped
- 1 teaspoon [5 mL] chili powder
- Salt, to taste
- Cayenne pepper, to taste
- Any broth or consomme
- 2 cups [500 mL] hot boiled drained white rice

- Rinse black beans; transfer into a large bowl and cover beans with 5 cups [1.25 mL] cold water.
- Leave beans to saok overnight or
Bring mixture to a boil and boil beans for 2 minutes; cover then set casserole aside for 1 hour.
- Either way, drain then boil black beans into salted boiling water until soft.
- Drain then pour black beans back into casserole.
- Mix in fried bacon bits, crushed garlic and chopped onion.
- Season mixture with chili powder, salt and Cayenne pepper.
- Pour in enough broth or consomme to well cover the black beans.
- Bring to a boil and simmer until black beans start to break up and mixture resembles a thick sauce.
- Pour sauce all over hot drained rice, and serve.
