Cauliflower, Zesty Mustard Sauce

Comments: This sauce is really hot; slowly mix in required mustard, 1 teaspoon [5 mL] at a time, tasting sauce before adding more.
Excellent served along with any grilled meat or fish.

  • 1 whole cauliflower
Zesty Mustard Sauce
  • 2 teaspoons [10 g] butter
  • 2 teaspoons [6 g] flour
  • 3/4 cup [190 mL] milk
  • 4 teaspoons [20 mL] mayonnaise
  • 3 teaspoons [15 mL] dry hot English mustard
  • 1 1/2 teaspoons [7.5 mL] lemon juice
  • 1/4 teaspoon [1 mL] Cayenne pepper
  • Clean then boil cauliflower into salted boiling water until soft yet still a little crunchy.
  • Well drain then transfer cauliflower into a large enough serving bowl; keep warm.
  • Prepare then pour hot zesty mustard sauce all over cauliflower.
  • Serve immediately.
Zesty Mustard Sauce
  • Over low heat, just melt butter into a medium-size saucepan.
  • Remove saucepan from heat; using a wooden spoon, stir flour into melted butter until smooth.
  • Stir in milk, until smooth.
  • Transfer saucepan back over heat.
  • Stirring, mix in mayonnaise, hot English mustard powder, lemon juice and Cayenne pepper.
  • Heat sauce for 1 to 2 minutes.
