- 10 medium-size carrots
- 1/2 onion, chopped
- 1/2 cup [125 mL] freshly chopped parsley
- 1 tablespoon [15 g] sugar
- 1 teaspoon [5 mL] salt
- 3 tablespoons [45 mL] oil
- 1/3 cup [80 mL] boiling water

- Preheat oven to 375°F [190°C].
- Rinse then lightly scrape carrots; half carrots lengthwise, then crosswise.
- Arrange carrot pieces into an oven-safe dish.
- Into a bowl, mix together chopped onion and parsley, sugar, salt and oil.
- Evenly sprinkle carrot pieces with mixture, then pour in boiling water.
- Cover dish.
- Transfer into preheated oven, for approximately 90 minutes.
