Baked Carrot Pieces

  • 10 medium-size carrots
  • 1/2 onion, chopped
  • 1/2 cup [125 mL] freshly chopped parsley
  • 1 tablespoon [15 g] sugar
  • 1 teaspoon [5 mL] salt
  • 3 tablespoons [45 mL] oil
  • 1/3 cup [80 mL] boiling water
  • Preheat oven to 375°F [190°C].
  • Rinse then lightly scrape carrots; half carrots lengthwise, then crosswise.
  • Arrange carrot pieces into an oven-safe dish.
  • Into a bowl, mix together chopped onion and parsley, sugar, salt and oil.
  • Evenly sprinkle carrot pieces with mixture, then pour in boiling water.
  • Cover dish.
  • Transfer into preheated oven, for approximately 90 minutes.
