Broiled Eggplant Slices

  • 1 eggplant
  • 1 small onion, chopped
  • 1/2 cup [125 mL] chopped fresh spinach leaves
  • Minced garlid, to taste
  • Antipasto, to taste
  • Honey, to taste
  • Salt and pepper, to taste
  • Any desired cheese slices
  • Dry breadcrumbs
  • Preheat oven broiler.
  • Slice eggplant lengthwise into 3/4-inch [1.9-cm] thick slices.
  • Arrange onto a baking sheet then broil eggplant slices on both sides under hot preheated oven broiler; remove from oven and reserve.
  • Into a non-stick frypan, just soften together chopped onion and spinach leaves.
  • Mix in some minced garlic, antipasto and honey.
  • Cook until onion is really soft and golden.
  • Salt and pepper mixture.
  • Delicately spread mixture on top of eggplant slices.
  • Cover mixture with cheese slices.
  • Sprinkle all over with dry breadcrumbs.
  • Broil under hot broiler until cheese has completely melted before serving, really hot.
