Baked Hashed Brown Potato Casserole

  • 2 pounds [900 g] potatoes
  • 1/2 cup [115 g] margarine, melted
  • 1 teaspoon [5 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • 1/2 cup [125 mL] chopped onion
  • 2 cups [500 mL] heavy whipping cream or sour cream
  • 1 [10-ounce / 284-mL] can cream of mushroom soup concentrate
  • 2 cups [450 g] any grated cheese
  • 2 cups [500 mL] finely crushed corn flakes cereals
  • Butter
  • Preheat oven to 350°F [180°C].
  • Peel and grate potatoes; rinse then squeeze out as much moisture as possible from grated potatoes.
  • Mix together 1/4 cup [60 g] melted margarine, salt, pepper, chopped onion, whipping cream or sour cream, cream of mushroom soup concentrate and grated cheese until well blended.
  • Butter a 9 1/2 x 13-inch [24 x 33-cm] baking pan; evenly arrange grated potatoes in pan.
  • Pour liquid mixture all over grated potatoes.
  • Mix together remaining 1/4 cup [60 g] melted margarine and crushed corn flakes cereals; sprinkle all over potato mixture.
  • Bake into preheated oven, for 45 minutes.
