- 1 pound [454 g] unpeeled baking potatoes, thinly sliced
- Salt
- Freshly ground black pepper
- Ground nutmeg
- 1/2 medium onion, thinly sliced
- 1 medium unpeeled tart green apple or pear, cored then really thinly sliced
- 1 cup [250 mL] low-fat milk or half-and-half
- 3/4 cup [190 mL] crumbled Gorgonzola or any Blue cheese [6 ounces / 175 g]
- 2 tablespoons [30 g] freshly grated Parmesan cheese

- Preheat oven to 400°F [200°C].
- Lay half of potato slices into a square 8 or 9-inch [20 or 23-cm] glass baking pan.
- Generously salt and pepper potato slices; lightly sprinkle potato slices with nutmeg.
- Arrange all onion and apple or pear slices all over seasoned potato slices.
- Completely cover with remaining potato slices.
- Salt, pepper and season potato slices with nutmeg.
- Pour in milk or half-and-half.
- Cover pan with al foil.
- Bake into preheated oven for 30 to 40 minutes, until potato slices are done.
- Remove al foil.
- Evenly top with Gorgonzola or any Blue cheese crumbs, then sprinkle with freshly grated Parmesan cheese.
- Bake uncovered into preheated oven for 10 to 15 minutes more, until just golden.
