Blue Cheese Scalloped Potatoes

  • 1 pound [454 g] unpeeled baking potatoes, thinly sliced
  • Salt
  • Freshly ground black pepper
  • Ground nutmeg
  • 1/2 medium onion, thinly sliced
  • 1 medium unpeeled tart green apple or pear, cored then really thinly sliced
  • 1 cup [250 mL] low-fat milk or half-and-half
  • 3/4 cup [190 mL] crumbled Gorgonzola or any Blue cheese [6 ounces / 175 g]
  • 2 tablespoons [30 g] freshly grated Parmesan cheese
  • Preheat oven to 400°F [200°C].
  • Lay half of potato slices into a square 8 or 9-inch [20 or 23-cm] glass baking pan.
  • Generously salt and pepper potato slices; lightly sprinkle potato slices with nutmeg.
  • Arrange all onion and apple or pear slices all over seasoned potato slices.
  • Completely cover with remaining potato slices.
  • Salt, pepper and season potato slices with nutmeg.
  • Pour in milk or half-and-half.
  • Cover pan with al foil.
  • Bake into preheated oven for 30 to 40 minutes, until potato slices are done.
  • Remove al foil.
  • Evenly top with Gorgonzola or any Blue cheese crumbs, then sprinkle with freshly grated Parmesan cheese.
  • Bake uncovered into preheated oven for 10 to 15 minutes more, until just golden.
