Cheese-Stuffed Baked Potatoes [4 variations]
Comments: *These potatoes can also be stuffed with grated Cheddar cheese and crisp bacon bits, grated Swiss cheese and chopped mushrooms, or grated Monterey Jack cheese and tiny sweet pepper dices.
Preparation time : 10 minutes
Baking time : 45 to 60 minutes in the oven, 10 to 12 minutes in a microwave oven.
Unwrapped baked on the barbecue potatoes can also be used.

  • 4 still warm baked potatoes
  • 340 g [1 1/2 cups] any grated cheese*, more to sprinkle
  • 1/2 cup [125 mL] sour cream or yogurt
  • Salt and pepper, to taste
  • Chopped green onion, to taste
  • Bake potatoes into a preheated 400°F [200°C] oven for 45 to 60 minutes or into a microwave oven on 'HIGH' for 10 to 12 minutes turning potatoes once.
  • Remove from oven then cut a thin slice lengthwise on top of each potato.
  • Remove potato meat leaving a 1/4-inch [6-mm] thich shell.
  • Using a fork, grossly crush potato meat before mixing in desired grated cheese and sour cream or yogurt.
  • Salt, pepper then evenly spoon mixture into potato shells.
  • Reheat stuffed potatoes, until hot and cheese has melted before serving, sprinkled with more grated cheese and chopped green onion.
