Baked Zucchini

  • 1 1/2 to 2 pounds [680 g to 1 kg] zucchini
  • Salt, to taste
  • 1 large onion, finely chopped
  • 1 cup [250 mL] milk
  • 1 cup [250 mL] breadcrumbs
  • 1/2 pound [227 g] any grated cheese
  • 1 or 2 eggs, well beaten
  • Oil
  • Preheat oven to 325°F [160°C].
  • Grind or grate, then salt zucchini.
  • Steam zucchini into a frying pan along into just enough oil to keep from sticking.
  • Add finely chopped onion; cook for 10 to 15 minutes more.
  • Leave to cool slightly before adding milk and half of breadcrumbs and of grated cheese.
  • Mix in well-beaten egg[s].
  • Pour mixture into a baking dish.
  • Mix together remaining breadcrumbs and grated cheese.
  • Evenly sprinkle mixture all over zucchini mixture.
  • Bake into preheated oven, for 30 to 45 minutes.
