Vegetable Mousse

Comments: Can be served as a hors d'oeuvre along with croutons and raw vegetables, or on a buffet table.
Will keep for up to 2 weeks, refrigerated.

  • 1 [6-ounce / 170-g] box lime-flavored gelatin mix
  • 1 cup [250 mL] boiling water
  • 1 1/2 cups [375 mL] already chopped into a food prosessor carrots
  • 1 1/2 cups [375 mL] already chopped into a food prosessor celery
  • 1 1/2 cups [375 mL] already chopped into a food prosessor green onions
  • 21 ounces [630 mL] mayonnaise
  • Dissolve lime-flavored gelatin into boiling water until completely dissolved.
  • Well mix in chopped carrots, celery and green onions, and mayonnaise.
  • Pour into a mold; refrigerate until set.
  • Unmold just before serving.
