Barbecue Tomato Sauce

Comments: For barbecue sandwiches, add to the recipe below, 6 pounds [2.7 kg] Francfort sausages [wieners], 5 pounds [2.3 kg] cooked beef or pork, thinly sliced or 8 pounds [3.6 kg] cooked ground beef.

  • 1 1/2 cups / 9 ounces [375 ml / 255 g] chopped onion
  • 1 1/2 cups / 9 ounces [375 ml / 255 g] chopped celery
  • 2 large garlic cloves, minced
  • 1/4 cup [60 ml] shortening
  • 1/2 cup [125 ml] brown sugar
  • 2 tablespoons [30 ml] prepared mustard
  • 1 can [48 ounces / 1.4 L] cream of tomato soup
  • 1/2 cup [125 ml] vinegar or lemon juice
  • Cook onion, celery and garlic in shortening until soft.
  • Add brown sugar, mustard, cream of tomato soup and vinegar or lemon juice.
  • Simmer for approximately 10 minutes.
