Barbecue Tomato Sauce

Comments: For barbecue sandwiches, add 6 pounds [2.7 kg] Francfort sausages [wieners], 5 pounds [2.27 kg] cooked thinly sliced beef or pork or 8 pounds [3.6 kg] cooked ground beef to the recipe below.

  • 1/4 cup [60 g] shortening
  • 1 1/2 cups [375 mL] chopped onion
  • 1 1/2 cups [375 mL] chopped celery
  • 2 large cloves garlic, minced
  • 1/2 cup [125 mL] brown sugar
  • 2 tablespoons [30 mL] prepared mustard
  • 1 can 48-ounce [1.4-L] cream of tomato soup
  • 1/2 cup [125 mL] vinegar or lemon juice
  • Into a large casserole, softened together chopped onion and celery with minced garlic in hot shortening.
  • Mix in brown sugar, mustard, cream of tomato soup and vinegar or lemon juice.
  • Leave to simmer, for approximately 10 minutes.
