For a change, omit chopped celery and Tabasco sauce and mix in4 cups [1 L] cucumber dices and 2 cups [500 mL] stuffed olive slices.

| Ingredients | Preparation |
- 1 [24-ounce / 680-g] pack lemon-flavored gelatin
- 4 cups [1 L] boiling water
- 2 [48-ounce / 1.4-L each] cans vegetable juice [V-8]
- 1 cup [250 mL] lemon juice
- 8 drops Tabasco sauce
- 4 cups [1 L] chopped celery
- 1 cup [250 mL] minced onion
- Lettuce leaves
- Mayonnaise

- Stir lemon-flavored gelatin into boiling water until completely dissolved.
- Stir in vegetable juice, lemon juice and Tabasco sauce until well blended.
- Refrigerate until slightly thickened, of egg white consistency.
- Mix in chopped celery and minced onion; pour into molds.
- Refrigerate until firm, for 4 to 6 hours.
- Serve over lettuce leaves, topped with mayonnaise.
