  • 1 [24-ounce / 680-g] pack lemon-flavored gelatin
  • 4 cups [1 L] boiling water
  • 2 [48-ounce / 1.4-L each] cans vegetable juice [V-8]
  • 1 cup [250 mL] lemon juice
  • 8 drops Tabasco sauce
  • 4 cups [1 L] chopped celery
  • 1 cup [250 mL] minced onion
  • Lettuce leaves
  • Mayonnaise
  • Stir lemon-flavored gelatin into boiling water until completely dissolved.
  • Stir in vegetable juice, lemon juice and Tabasco sauce until well blended.
  • Refrigerate until slightly thickened, of egg white consistency.
  • Mix in chopped celery and minced onion; pour into molds.
  • Refrigerate until firm, for 4 to 6 hours.
  • Serve over lettuce leaves, topped with mayonnaise.
