Lobster Salad

  • 5 pounds [2.4 kg] cooked lobster meat
  • 1/2 cup [125 ml] lemon juice
  • 2 ounces [60 g] green onions, chopped
  • 1 1/2 pounds [700 g] celery, chopped
  • Salt and pepper to taste
  • 1/4 cup [60 ml] freshly chopped parsley
  • 10 1/2 ounces [300 ml] mayonnaise
  • Lettuce leaves
  • Lemon slices
  • Mix together lobster meat, lemon juice, green onions, celery, salt, pepper and parsley.
  • Add mayonnaise; check seasonings.
  • Serve salad over lettuce leaves; garnish with lemon slices.
