Lobster Salad

  • 5 pounds [2.4 kg] cooked lobster meat bite-size pieces
  • 1/2 cup [125 mL] lemon juice
  • 2 ounces [60 g] chopped green onions
  • 1 1/2 pounds [680 g] chopped celery
  • Salt and pepper, to taste
  • 1/4 cup [60 mL] freshly chopped parsley
  • 10 1/2 ounces [315 mL] mayonnaise
  • Lettuce leaves, to serve
  • Lemon slices, to serve
  • Mix together lobster meat dices and lemon juice with chopped green onions and celery, salt, pepper and freshly chopped parsley.
  • Well yet delicately mix in mayonnaise; check for seasonings.
  • Serve lobster salad over lettuce leaves, garnished with lemon slices.
