- 5 pounds [2.4 kg] cooked lobster meat
- 1/2 cup [125 ml] lemon juice
- 2 ounces [60 g] green onions, chopped
- 1 1/2 pounds [700 g] celery, chopped
- Salt and pepper to taste
- 1/4 cup [60 ml] freshly chopped parsley
- 10 1/2 ounces [300 ml] mayonnaise
- Lettuce leaves
- Lemon slices

- Mix together lobster meat, lemon juice, green onions, celery, salt, pepper and parsley.
- Add mayonnaise; check seasonings.
- Serve salad over lettuce leaves; garnish with lemon slices.
