Molasses Taffy

Servings: 1 1/2 kg [3 1/3 pounds]

  • 5 1/2 cups [1.375 ml] sugar
  • 2 cups [500 ml] molasses
  • 2 cups [500 ml] water
  • 1/2 teaspoon [2.5 ml] baking soda
  • 1/4 cup [60 ml] butter
  • Vanilla
  • In a casserole, mix together sugar, molasses and water.
  • Add baking soda.
  • Cook over low hedat until sugar is completely dissolved.
  • Add butter, greasing all around the casserole, so that mixture does not spill.
  • Boil, without stirring, until a drop of the mixture forms a hard ball in cold water, or 500°F [260°C] on a candy thermometer.
  • Add vanilla to taste.
  • Pour mixture into a square greased pan.
  • Cool.
  • Stretch mixture, with buttered or floured hands, until pale.
  • Cut into small pieces.
