Molasses Taffy

  • 5 1/2 cups [1.1 g] sugar
  • 2 cups [500 mL] molasses
  • 2 cups [500 mL] water
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/4 cup [60 g] butter
  • Vanilla, to taste
  • Into a large casserole, mix together sugar, molasses and water.
  • Mix in baking soda.
  • Cook over low heat until sugar is completely dissolved.
  • Stir in butter greasing the casserole all around so that mixture does not spill.
  • Boil, without until a candy thermometer registers 500°F [260°C], hard-ball stage in cold water.
  • Stir in some vanilla.
  • Pour mixture into a square greased pan.
  • Leave mixture to cool until it can be handled.
  • Butter or flour your hands then stretch mixture into a fine rope until pale.
  • Cut into small pieces; wrap into individual wrappers.
