- 1 pound [454 g] sausage meat
- 1/4 cup [60 mL] chopped onion
- 1/4 cup [60 mL] chopped sweet pepper [color to taste]
- 6 eggs
- 1/2 cup [125 mL] sour cream
- Salt and pepper, to taste

- Preheat oven to 350°F [180°C].
- Into a frypan, brown together sausage meat, chopped onion and chopped sweet pepper; drain.
- Evenly spoon 3/4th of mixture over the bottom of an oven-safe dish.
- Into a bowl, beat together eggs and sour cream, salt and pepper.
- Pour beaten eggs mixture all over sausage meat mixture.
- Bake into preheated oven, until eggs are half set.
- Stir, then sprinkle eggs with remaining sausage meat mixture.
- Transfer dish back into oven, until eggs are set.
