Easter Breakfast Sausage Meat Casserole
Servings: 4 to 6
  • 1 pound [454 g] sausage meat
  • 1/4 cup [60 mL] chopped onion
  • 1/4 cup [60 mL] chopped sweet pepper [color to taste]
  • 6 eggs
  • 1/2 cup [125 mL] sour cream
  • Salt and pepper, to taste
  • Preheat oven to 350°F [180°C].
  • Into a frypan, brown together sausage meat, chopped onion and chopped sweet pepper; drain.
  • Evenly spoon 3/4th of mixture over the bottom of an oven-safe dish.
  • Into a bowl, beat together eggs and sour cream, salt and pepper.
  • Pour beaten eggs mixture all over sausage meat mixture.
  • Bake into preheated oven, until eggs are half set.
  • Stir, then sprinkle eggs with remaining sausage meat mixture.
  • Transfer dish back into oven, until eggs are set.
