Cream Cheese Lemon Frosting
  • 1/4 cup [60 g] butter
  • 8 ounces [227 g] softened cream cheese
  • 2 tablespoons [30 mL] lemon juice
  • 1 tablespoon [15 mL] grated lemon rind
  • 1 1/2 teaspoons [7.5 mL] vanilla
  • 5 cups [1.25 L] icing sugar
  • Beat together butter, softened cream cheese, lemon juice, grated lemon rind and vanilla, until light.
  • Slowly beat in icing sugar, until light and creamy.
