Banana Chocolate Bread

  • 2 eggs, slightly beaten
  • 1 cup [250 mL] crushed bananas [2 or 3]
  • 1/3 cup [80 mL] oil
  • 1/3 cup [80 mL] milk
  • 1 cup [140 g] all-purpose flour
  • 1 cup [250 mL] whole wheat flour
  • 1/2 cup [125 mL] all-bran cereals
  • 1/2 cup [100 g] sugar
  • 2 teaspoons [10 mL] baking powder
  • 2 [1-ounce / 28-g each] semi-sweet chocolate squares , grated
  • Preheat oven to 350°F [180°C].
  • Well mix together beaten eggs, crushed bananas, oil and milk.
  • Mix together all-purpose flour, whole wheat flour, all-bran cereals, sugar, baking powder and grated chocolate.
  • Add to first mixture, mixing just enough to moisten dry ingredients.
  • Evenly pour dough into an 8 x 4-inch [2-L] lighly butterd bread pan.
  • Bake bread into preheated oven for approximately 1 hour, until done.
  • Leave bread to cool in pan for 10 minutes, before unmolding bread onto a wire rack to cool completely.
