- 1/4 to 1/2 ham [approximately 4 1/2 pounds - 2 kg]
- Approximately 3 cups [750 mL] cold water, to completely cover the ham
- 1 or 2 bottles or cans beer
- Whole cloves or ground clove, to taste
- Peppercorns, to taste
- Dry mustard, to taste
- 1 bay leaf
- Celery seeds, to taste
- Whole peeled carrots, to taste
- Whole peeled onions, to taste

- Bring together all ingredients into a large casserole.
- Leave ham to simmet slowly, half-covered for at least 2 hours, until tender to the fork.
- Remove from casserole, slice and serve ham hot, or leave ham to cool completely into broth, refrigerate then enjoy ham cold.
