Apple Coconut Cream Easter Eggs
Comments: These candies should be refrigerated between servings.
These eggs can be dipped into melted chocolate or carob.
  • 1/2 cup [125 mL] soft cream cheese
  • 1/4 cup [60 mL] frozen apple juice concentrate, thawed
  • 1 cup [250 mL] unsweetened coconut
  • 1/4 teaspoon [1 mL] almond or vanilla extract
  • 1 tablespoon [15 mL] non-instant skim milk powder
  • Cream together all ingredients into a moldable dough.
  • With moistened hands, shape dough into egg shapes.
  • Cover and refrigerate overnight, until firm.
