Banana Fritters
Comments: If desired, serve along with vanilla ice cream.

  • 1 1/2 cups [210 g] all-purpose flour
  • 1 teaspoon [5 mL] baking powder
  • 1/4 teaspoon [1 mL] baking soda
  • 1/4 teaspoon [1 mL] salt
  • 3/4 cup [190 mL] water
  • 4 firm bananas
  • 3 cups [750 mL] vegetable oil
  • Into a large bowl, combine 1 cup [140 g] of the flour, baking powder, baking soda and salt.
  • Slowly whisk in water, until smooth.
  • Peel then cut each banana crosswise into 3 pieces [12 pieces total].
  • Lightly coat bananas with remaining 1/2 cup [70 g] flour.
  • Heat oil into a wok over medium-high heat until it reaches 375°F [190°C].
  • Dip banana pieces into dough until completely coated.
  • Fry 4 to 6 banana pieces at a time into hot oil until golden, for 3 to 5 minutes.
  • Leave to drain onto paper toweling before serving.
