- 1 1/2 cups [210 g] all-purpose flour
- 1 teaspoon [5 mL] baking powder
- 1/4 teaspoon [1 mL] baking soda
- 1/4 teaspoon [1 mL] salt
- 3/4 cup [190 mL] water
- 4 firm bananas
- 3 cups [750 mL] vegetable oil

- Into a large bowl, combine 1 cup [140 g] of the flour, baking powder, baking soda and salt.
- Slowly whisk in water, until smooth.
- Peel then cut each banana crosswise into 3 pieces [12 pieces total].
- Lightly coat bananas with remaining 1/2 cup [70 g] flour.
- Heat oil into a wok over medium-high heat until it reaches 375°F [190°C].
- Dip banana pieces into dough until completely coated.
- Fry 4 to 6 banana pieces at a time into hot oil until golden, for 3 to 5 minutes.
- Leave to drain onto paper toweling before serving.
