- 2 medium green cooking apples
- 1 cup [140 g] all-purpose flour
- 2 cups [500 mL] water
- 3 teaspoons [15 mL] sesame oil
- 3 cups [750 mL] vegetable oil
- 2 cups [400 g] sugar
- 2 tablespoons [30 mL] sesame seeds
- Cold water
- Ice cubes

- Peel then cut apples into quarters and remove cores.
- Half each quarter crosswise, making 16 pieces total.
- Measure flour into bowl.
- Slowly whisk in 1 cup [250 mL] water.
- Pour 2 teaspoons [10 mL] sesame oil.
- Whisk until smooth.
- Brush remaining 1 teaspoon [5 mL] sesame oil over a serving plate; set aside.
- Transfer apple pieces into batter, turning to coat completely.
- Heat vegetable oil into wok over medium-high heat until it reaches 375°F [190°C].
- Using a slotted metal spoon, lift half of apple pieces from batter and dip into hot oil.
- Fry until just golden, about 2 minutes.
- Drain onto paper toweling.
- Repeat with remaining apple pieces.
- Pour oil out of wok but do not clean wok.
- Pour remaining 1 cup [250 mL] water into the wok; add sugar.
- Cook stirring until mixture reaches about 235°F [113°C] onto a candy thermometer, for 10 to 13 minutes.
- Immediately remove from heat.
- Mix in drained apple pieces and sesame seeds.
- Transfer to reserved oiled serving plate.
- Pour some cold water into a bowl; add some ice cubes.
- Dunk apple pieces into icy water before eating.
