Beefsteaks with Onion [Biftecks hachés à l'oignon]

  • 1 pound [454 g] ground chuck beef
  • 4 medium onions, finely chopped
  • 1 1/2 ounces [43 g] butter
  • Salt and pepper
  • Make 8 very thin patties of equal dimensions.
  • Cover half of them with a thick layer of chopped onion.
  • Cover with the other patties and press together firmly.
  • Heat butter in a skillet, and when very hot, pan-grill 4 minutes on each side.
  • Season with salt and pepper.
