Meringued Pears [Poires méringuées]
Comments: This can also be made with apples or pears.
It is good for using fruit too bruised to be eaten at table and the whites of eggs left over from making a custard or a sauce.

  • 4 pounds [2 kg] pears
  • 4 pounds [2 kg] sugar
  • 4 egg whites
  • Water
  • Peel carefully and core pears.
  • Cut them in pieces and cook in a saucepan with 1/2 cup [125 ml] water and 2 ounces [57 g] sugar.
  • You should use more sugar for apples.
  • As the pears cook, crush them with a fork to make a thick sauce like applesauce.
  • Put the pear sauce in an ovenproof serving dish.
  • Cover with a meringue made of the beaten egg whites into which 2 ounces [57 g] have been gently folded.
  • Bake at 300°F [150°C] for 1 hour.
  • Serve hot or lukewarm.
