- 4 pounds [2 kg] pears
- 4 pounds [2 kg] sugar
- 4 egg whites
- Water

- Peel carefully and core pears.
- Cut them in pieces and cook in a saucepan with 1/2 cup [125 ml] water and 2 ounces [57 g] sugar.
- You should use more sugar for apples.
- As the pears cook, crush them with a fork to make a thick sauce like applesauce.
- Put the pear sauce in an ovenproof serving dish.
- Cover with a meringue made of the beaten egg whites into which 2 ounces [57 g] have been gently folded.
- Bake at 300°F [150°C] for 1 hour.
- Serve hot or lukewarm.
