  • 4 1/2 ounces [128 g] soft unsalted butter
  • 4 1/2 ounces [128 g] sugar
  • 3 egg whites
  • 4 1/2 ounces [128 g] sifted flour
  • 1 1/2 teaspoons [7.5 ml] vanilla
  • Preheat the oven to 400°F [200°C].
  • Work the butter and sugar together until smooth and creamy.
  • Add the unbeaten egg whites one by one, stirring well after each addition.
  • Resift the flour into the mixture and add the vanilla.
  • Using a pastry tube fitted with a small plain tip, force 3 inch [7 cm] strips on to a buttered cookies sheet, leaving space between each strip.
  • Bake 6 to 8 minutes or until lightly browned around the edge.
