Classic Tiramisu
Comments: Mascarpone cheese [Italian triple-cream cheese].
Always use best quality chocolate.
If necessary, substitute espresso coffee: dissolve 1 tablespoon [15 ml] instant coffee in 1/4 cup [60 ml] hot water

  • 3 eggs, separated
  • 4 tablespoons [60 g] sugar
  • 1 cup [225 g] mascarpone cheese
  • 8 amaretti cookies
  • 1 ounce [28 g] semi-sweet chocolate, grated
  • 1/4 cup [60 mL] strong espresso coffee
  • 1 1/2 tablespoons [22.5 mL] Amaretto Liqueur
  • 1 1/2 tablespoons [22.5 mL] Cognac
  • 8 dry ladyfingers
  • Cocoa powder or additional grated chocolate, to garnish
  • Into a bowl, beat egg whites until soft peaks form; add half of sugar and beat until stiff.
  • Into a clean bowl, beat together egg yolks, remaining sugar and mascarpone cheese until smooth.
  • Crush 4 of the amaretti cookies.
  • Gently fold cookie crumbs into mascarpone mixture along with grated semi-sweet chocolate.
  • Gently whisk in beaten egg whites.
  • Into a clean bowl, combine coffee, Amaretto and Cognac.
  • Dip 4 of the ladyfingers in mixture; lay over the bottom of a small shallow serving dish.
  • Top with half of mascarpone cheese mixture.
  • Dip remaining ladyfingers in remaining coffee mixture; lay over cream layer.
  • Top with remaining mascarpone cheese mixture.
  • Sift cocoa powder over top or sprinkle top with grated chocolate.
  • Serve, garnish with remaining amaretti cookies.
