- 3 eggs, separated
- 4 tablespoons [60 g] sugar
- 1 cup [225 g] mascarpone cheese
- 8 amaretti cookies
- 1 ounce [28 g] semi-sweet chocolate, grated
- 1/4 cup [60 mL] strong espresso coffee
- 1 1/2 tablespoons [22.5 mL] Amaretto Liqueur
- 1 1/2 tablespoons [22.5 mL] Cognac
- 8 dry ladyfingers
- Cocoa powder or additional grated chocolate, to garnish

- Into a bowl, beat egg whites until soft peaks form; add half of sugar and beat until stiff.
- Into a clean bowl, beat together egg yolks, remaining sugar and mascarpone cheese until smooth.
- Crush 4 of the amaretti cookies.
- Gently fold cookie crumbs into mascarpone mixture along with grated semi-sweet chocolate.
- Gently whisk in beaten egg whites.
- Into a clean bowl, combine coffee, Amaretto and Cognac.
- Dip 4 of the ladyfingers in mixture; lay over the bottom of a small shallow serving dish.
- Top with half of mascarpone cheese mixture.
- Dip remaining ladyfingers in remaining coffee mixture; lay over cream layer.
- Top with remaining mascarpone cheese mixture.
- Sift cocoa powder over top or sprinkle top with grated chocolate.
- Serve, garnish with remaining amaretti cookies.
