Vegetable Sandwiches
Comments: Will not taste as strong after a while.
Servings: Enough filling for 1 loaf of bread.

  • 3 carrots, peeled
  • 1 cucumber, peeled or not
  • 1 onion, peeled or not
  • 1 sweet any color pepper, halved, membranes removed and seeded
  • 1/4 teaspoon [1 mL] salt
  • 3 ounces [85 g] cream cheese
  • 1/2 cup [125 mL] mayonnaise or salad dressing
  • Finely chop carrots, cucumber, onion ans sweet pepper; press vegetables through a sieve to drain all juices.
  • Mix together with cream cheese and mayonnaise.
  • Will keep for up to 5 to 6 days, refrigerated.
