- 3 carrots, peeled
- 1 cucumber, peeled or not
- 1 onion, peeled or not
- 1 sweet any color pepper, halved, membranes removed and seeded
- 1/4 teaspoon [1 mL] salt
- 3 ounces [85 g] cream cheese
- 1/2 cup [125 mL] mayonnaise or salad dressing

- Finely chop carrots, cucumber, onion ans sweet pepper; press vegetables through a sieve to drain all juices.
- Mix together with cream cheese and mayonnaise.
- Will keep for up to 5 to 6 days, refrigerated.
