Spinach Balls

  • 2 [10-ounce / 284-g each] packages chopped frozen spinach, boiled and drained
  • 2 cups [500 mL] bread stuffing mix with herbs
  • 2 onions, finely chopped
  • 6 eggs, beaten
  • 3/4 cup [175 g] melted butter
  • 1/2 cup [115 g] grated Parmesan cheese
  • 1 tablespoon [15 mL] garlic salt
  • 1/2 teaspoon [2.5 mL] thyme
  • 1/2 tablespoon [7.5 mL] black pepper
  • Mix together drained spinach, bread stuffing mix with herbs, finely chopped onions, beaten eggs, melted butter, grated Parmesan cheese, galic salt, thyme and black pepper.
  • Shape mixture into approximately 70 small balls; transfer onto a cookie sheet and freeze.
  • When frozen, transfer balls into a freezer plastic bag.
  • Before baking balls, let them stand at roome temperature for 30 minutes.
  • Meanwhile, preheat oven to 350°F [180°C].
  • Bake balls into preheated oven, for 20 minutes.
