Bacon Muffins

  • 12 slices bacon
  • 1 cup [140 g] prepared flour
  • 1 cup [250 mL] prepared corn flour
  • 1/4 cup [60 g] sugar
  • 2 eggs, well beaten
  • 1 cup [250 mL] milk
  • Preheat oven to 425°F [220°C].
  • Fry bacon slices until crisp.
  • Drain reserving 1/4 cup [60 mL] melted fat; crumble bacon slices.
  • Mix together white flour, corn flour and sugar.
  • Mix in beaten eggs, milk and reserved melted bacon fat just enough to moisten.
  • Mix in bacon crumbs.
  • Pour dough into greased muffin tins.
  • Bake into preheated oven for 20 to 25 minutes.
