Strawberry Bread

  • 3 cups [420 g] all-purpose flour
  • 2 cups [400 g] sugar
  • 1 teaspoon [5 mL] baking soda
  • 1 teaspoon [5 mL] salt
  • 1 teaspoon [5 mL] cinnamon
  • 4 eggs, beaten
  • 1 1/4 cups [310 mL] vegetable oil
  • 2 [10-ounce / 284-g each] packs frozen strawberries, thawed and chopped
  • 1 cup [250 mL] chopped pecans
  • Preheat oven to 350°F [180°C].
  • Into a large bowl, sift together flour, sugar, baking soda, salt and cinnamon.
  • Make a well in the center.
  • Mix together eggs, oil and chopped strawberries and pecans.
  • Well mix eggs mixture into sifted dry ingredients
  • Using a spoon, evenly fill 2 [9 x 5-inch / 23 x 13-cm each] bread pans.
  • Bake into preheated oven for 1 hour.
  • Remove from oven;leave to cool in pans for 10 minutes.
  • Unmold onto wire racks; leave to cool completely.
