- 3 cups [420 g] all-purpose flour
- 2 cups [400 g] sugar
- 1 teaspoon [5 mL] baking soda
- 1 teaspoon [5 mL] salt
- 1 teaspoon [5 mL] cinnamon
- 4 eggs, beaten
- 1 1/4 cups [310 mL] vegetable oil
- 2 [10-ounce / 284-g each] packs frozen strawberries, thawed and chopped
- 1 cup [250 mL] chopped pecans

- Preheat oven to 350°F [180°C].
- Into a large bowl, sift together flour, sugar, baking soda, salt and cinnamon.
- Make a well in the center.
- Mix together eggs, oil and chopped strawberries and pecans.
- Well mix eggs mixture into sifted dry ingredients
- Using a spoon, evenly fill 2 [9 x 5-inch / 23 x 13-cm each] bread pans.
- Bake into preheated oven for 1 hour.
- Remove from oven;leave to cool in pans for 10 minutes.
- Unmold onto wire racks; leave to cool completely.
