Valentine's Day Salad

  • 1 1/2 tablespoons [10.5 g] unflavored gelatin
  • 1/4 cup [60 mL] cold water
  • 2 cups [500 mL] crushed pineapple
  • 1/2 cup [100 g] sugar
  • 2 tablespoons [30 mL] Maraschino cherry juice
  • 2 [3-ounce / 85-g each] packages cream cheese, softened
  • 12 drained Maraschino cherries, finely chopped
  • 1 cup [250 mL] whipping cream
  • Soften gelatin into cold water.
  • Heat together crushed pineapple and sugar.
  • Stir in softened gelatin and Maraschino cherry juice, to dissolve gelatin.
  • Leave to cool.
  • Into a large bowl, cream softened cream cheese before stirring in chopped Maraschino cherries.
  • Mix in crushed pineapple gelatin mixture, a little at a time, then whip until slightly thickened.
  • Whip then gently fold cream into pineapple mixture.
  • Pour into a mold and refrigerate until set.
