- 1 1/2 tablespoons [10.5 g] unflavored gelatin
- 1/4 cup [60 mL] cold water
- 2 cups [500 mL] crushed pineapple
- 1/2 cup [100 g] sugar
- 2 tablespoons [30 mL] Maraschino cherry juice
- 2 [3-ounce / 85-g each] packages cream cheese, softened
- 12 drained Maraschino cherries, finely chopped
- 1 cup [250 mL] whipping cream

- Soften gelatin into cold water.
- Heat together crushed pineapple and sugar.
- Stir in softened gelatin and Maraschino cherry juice, to dissolve gelatin.
- Leave to cool.
- Into a large bowl, cream softened cream cheese before stirring in chopped Maraschino cherries.
- Mix in crushed pineapple gelatin mixture, a little at a time, then whip until slightly thickened.
- Whip then gently fold cream into pineapple mixture.
- Pour into a mold and refrigerate until set.
