Stuffed Onion Salad
Comments: Serve sliced onions on lettuce leaves.

  • 4 to 6 large sweet 'Vidalia' onions
  • 8 ounces [227 g] cream cheese
  • 2 tablespoons [30 mL] minced deviled ham
  • 1 teaspoon [5 mL] salt
  • Few peppercorns
  • Peel onions.
  • Cut away centers from onions using a special tool to core apples [reserve centers for another use].
  • Beat cream cheese until light and creamy.
  • Fold in minced deviled ham, salt and peppercorns.
  • Stuff onion centers with mixture.
  • Refrigerate for many hours, until stuffing is hard, before serving.
