Greek Salad
Comments: The secret to a good salad is the freshness of the lemon juice!
The salad dressing recipe can be doubled, even tripled.
Servings: 1 cup [250 mL] salad dressing

Salad
  • 1 small lettuce head [Romaine if possible], rinsed and torned
  • 2 green onions, cut into 1-inch [2.5-cm] sections
  • 2 celery stalks, chopped
  • 1 cucumber, chopped
  • 1 tomato, chopped
  • 1 sweet green pepper, membranes removed and seeded, into strips
  • Crumbled Feta cheese, to taste
  • Large Greek 'calamata' olives
Salad Dressing
  • 1/2 cup [125 mL] olive oil
  • 1/4 cup [60 mL] vegetable oil
  • 1/3 cup [80 mL] freshly squeezed lemon juice [approximately 3 lemons]
  • 1 teaspoon [5 mL] salt
  • 1/4 teaspoon [1 mL] freshly ground black pepper
  • 1 clove garlic, minced or crushed
  • 3/4 teaspoon [3.75 mL] dried oregano
  • 1/4 teaspoon [1 g] sugar
  • Prepare salad dressing.
  • Mix together all salad ingredients except cheese and olives into a large salad bowl.
  • Pour then thoroughly mix in salad dressing.
  • Divide among individual salad bowls.
  • Serve, each serving garnished with crumbled Feta cheese and 1 large Greek olive.
Salad Dressing
  • Into a jar with a lid, well mix together all salad dressing ingredients shaking jar vigorously.
  • Keep refrigerated until ready to serve.
  • Shake before seriving, at room temperature.
