Old-Time Fried Okra
Comments: Typical of the South of the United States.
IngredientsPreparation
  • 1/2 cup [70 g] all-purpose flour
  • 1/2 cup [125 mL] corn flour
  • 1/2 teaspoon [2.5 mL] salt
  • 1/8 teaspoon [0.5 mL] pepper
  • 4 cups [1 L] diagonally sliced 1/4-inch [6-mm] or less thick okra slices
  • 1 egg ,beaten
  • 1 cup [225 g] shortening
  • Well mix together all-purpose flour, corn flour, salt and pepper.
  • Into a separate bowl, mix together beaten egg and okra slices.
  • Dip okra slices into flours mixture.
  • Into a large frypan, heat shortening until hot.
  • Fry okra slices into hot fat until golden brown and crisp.
  • Drain onto paper toweling before serving.
