Tomato Pie

  • 12 slices bacon
  • 3 large tomatoes, seeded and sliced [o enough to fill pie shell]
  • 1 [9-inch / 23-cm] baked into a deep pie plate pastry shell
  • 8 green onions, minced
  • 1 1/2 cups [340 g] grated extra sharp Cheddar cheese
  • 1 1/2 cups [375 mL] mayonnaise
  • Preheat oven to 350°F [180°C].
  • Fry bacon slices; drain and crumble.
  • Arrange tomato slices into pastry shell; sprinkle all over with minced green onions and bacon crumbs.
  • Mix together grated extra sharp Cheddar cheese and mayonnaise.
  • Evenly spread mixture all over tomato slices.
  • Bake into preheated oven for 30 minutes.
