- 1 [5-pound / 2.3-kg] beef tenderloin
- 4 pounds [1.8 kg] fresh spinach, boiled for aprroximately 5 minutes
- 2 onions, minced
- 1 tablespoon [15 mL] finely minced garlic
- 4 cups [1 L] boiled drained rice
- 3 cups [675 g] grated Parmesan cheese
- 2 tablespoons [30 mL] freshly chopped basil
- Freshly ground black pepper, to taste
- Melted butter

- Preheat oven broiler.
- Thoroughly mix together drained spinach, minced onions and garlic, drained rice, grated Parmeasn cheese, fresh basil and pepper.
- Butterfly then stuff tenderloin with spinach stuffing.
- Fold and secure opening with a string or thread.
- Coat tenderloin with melted butter.
- Transfer beef tenderloin, cut side down, onto the rack of a roasting pan.
- Brown meat under preheated broiler.
- Roast beef into 350°F [180°C] oven, for 30 to 45 minutes.
