Manicotti

  • 8 ounces [227 g] manicotti
  • 8 ounces [227 g] Mozzarella cheese [2 cups / 500 mL]
  • 15 ounces [425 g] Ricotta cheese [2 cups / 500 mL]
  • 1/4 cup [60 g] grated Parmesan cheese
  • 2 tablespoons [30 mL] fresh parsley
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • 3 1/2 cups [875 mL] spaghetti sauce
  • Cook manicotti according ot instructions.
  • Cool in single layer on wax paper.
  • Combine cheeses, parsley, salt and pepper for filling.
  • Spoon into manicotti.
  • Spread a thin layer of sauce over bottom of 13 x 9-inch [33 x 23-cm] baking pan.
  • Arrange manicotti in single layer over sauce, pour remaining auce over top.
  • Cover.
  • Bake at 350°F [180°C] for 40 minutes.
  • Remove foil and bake 15 minutes longer.
