Pumpkin Bread

Comments: Mom's recipe.
  • 1/3 cup [75 g] shortening
  • 1 1/2 cups [330 g] sugar
  • 2 eggs
  • 1 2/3 cups [230 g] flour
  • 1/4 teaspoon [1 mL] baking powder
  • 1 teaspoon [5 mL] baking soda
  • 3/4 teaspoon [3.75 mL] salt
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 1/4 teaspoon [1 mL] ground clove
  • 1/3 cup [80 mL] water
  • 1 cup [250 mL] cooked pumpkin puree
  • 1/2 teaspoon [125 mL] chopped nuts
  • Preheat oven to 350°F [180°C].
  • Beat together shortening, sugar and eggs.
  • Mix together flour, baking powder, baking soda, salt, cinnamon and ground clove; mix into first mixture.
  • Stir in water and pumpkin puree, then chopped nuts.
  • Evenly pour into a greased and floured bread loaf pan.
  • Bake into preheated oven, for 45 to 60 minutes.
  • Start checking after 35 minutes.
  • Leave to cool in pan, onto a wire rack.
